A few months ago I decided that I would start eating at least one salad (some sort of greens + protein & veggies) every day. I did it for about a month (January, go figure!) and then I got off track on all my health goals until about 3 weeks ago. I have started eating a salad a day again & it makes me feel AMAZING!!

A few years ago I stopped putting dressing on my salad and learned to eat it plain. Since then I have decided that most fo the time dressing is a great way to ruin a wonderful salad. There are so many great flavors to taste in a salad with a variety of ingredients and dressing just covers those flavors up!

So, what is the foundation for an incredible salad?

Greens: baby spinach, romaine lettuce, spring mix lettuce, etc.

Protein: chicken, black beans, cottage cheese, tuna, boiled egg, almond slivers, etc.

Veggies: tomatoes, corn, bell pepper, asparagus, artichoke, green peas, carrots, etc.

Optional: cheese (feta, white cheddar, sharp cheddar & pepperjack are my favorites), seeds, fruit, cooked pasta

As I sit here eating this delicious Vegan Dark Chocolate Chip Cookie (don’t worry, I will share the recipe!), I am trying to figure out just what to say in this blog. It’s not that I don’t have a lot that I want to say or share, but for some reason it is hard to decide what to say first. This is one of the reasons why I have not been blogging before now. Where to start?

I guess I can go with the cliché and tell you a little about myself…

I am a 22 year old female, married to an amazing man for two years this June, I am a registered nurse and work in a pediatric hospital with heart patients. I LOVE my job. I don’t always love the hours (I stay exhausted a lot), but I LOVE what I do. In my spare time my favorite things are cooking, finding/experimenting with new recipes, finding ways to be frugal with time and money, reading, spending time with my Jesus, and my family & my friends.

I am trying to become a frequent exerciser. I get on these exercising streaks for weeks at a time, then something happens to distract me (squirrel!) & I fall off the bandwagon and have to get back on. Healthy eating is not so hard for me to do. I love cooking, finding new recipes, and trying new foods so much that it’s not hard for me to stay excited about eating well. I have a thing for fruits & veggies. I get ridiculously excited when I find new fruit & veggie combinations to try. I know, I’m weird. I also have a monstrous sweet tooth. I am trying to tame it, but to no avail. So, now I just try to limit sweets and bake healthier.

My favorite colors are blue and green. I’d say my favorite foods are salads, oatmeal, chocolate, and any sort of dessert. My life verses are Proverbs 31:10-31. I want to travel the world someday.

I am addicted to reading food/health blogs. This is part of the reason why I decided to start blogging myself. I am also blogging as a life journal so that I will be able to look back on my life and see God’s faithfulness through every day life.

I also want to blog because I want to be an encouragement to anyone who might stumble across my ramblings. Life is tough and filled with heartache, but we are so blessed to be alive! In 3 hours it will be resurrection Sunday, the day when Jesus Christ arose from the dead so many years ago. Thank you, Lord, that I live because YOU live!!

“Be anxious for nothing, but in everything by prayer and supplication with thanksgiving let your requests be made known to God. And the peace of God, which surpasses all comprehension, will guard your hearts and your minds in Christ Jesus. Finally, brethren, whatever is true, whatever is honorable, whatever is right, whatever is pure, whatever is lovely, whatever is of good repute, if there is any excellence and if anything worthy of praise, dwell on these things” Philippians 4:6-8 (NASB).

Oh, yes, and now for those cookies…

Ingredients

1/2 cup brown sugar
2 tsp packets of Truvia
1/2 cup unsweetened applesauce
1 chia egg (1 tbsp chia seeds + 3 tbsp warm water)
1.5 tsp. vanilla extract
1 cup white whole wheat flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 cup quick cooking oats
1/2 cup dark chocolate chips

Directions

1. Preheat oven to 350 degrees.
2. Mix brown sugar, truvia, and applesauce in a large mixing bowl.
3. Make chia egg (in a small bowl add 1 tbsp chia seeds & 3 tbsp of warm water, let sit for 5 minutes or until goopy egg consistency).
4. In a medium mixing bowl, stir together flour, baking soda, salt and cinnamon.
5. Add chia egg & vanilla to sugar mixture, stir well.
6. Stir flour mixture into sugar mixture until well combined.
7. Stir in oats, then chocolate chips.
8. Roll dough into tsp-sized balls and place 2 inches apart on ungreased cookie sheets. Bake 10-15 minutes.

Should make about 28 tsp. sized cookies (before baking). 65 calories per cookie. YUM!!!
